The best stainless steel pan is one that spreads heat well and that you will keep for life: uncoated 18/10 steel, a thick base or a multi-layer body, and a handle that can go in the oven. I compared the product pages of 16 models in 28 cm, from Beka, WMF, Fissler, De Buyer, Cristel, Mauviel, Tefal and Sitram, checked their Amazon France price on 7 October 2026 and matched each one to a profile: searing red meat and deglazing the browned bits, sautéing vegetables, browning fish, crisping poultry and finishing in the oven. This comparison is based on reading product pages, not on hands-on testing: none of these pans has been used by our team, hence the "Editor's review" badge. I checked 16 listings on Amazon France, all 28 cm to compare like with like, and kept the 6 that cover each profile with an active offer on 7 October 2026.
For each one, I recorded the price, availability and seller on Amazon, then cross-checked the alloy, base construction, induction compatibility, maximum oven temperature, weight, handle and guarantee against the manufacturer's page. A value that is missing or contradictory is marked "n.c.": when Amazon says 300 °C in the oven for the Beka Chef and Beka says 200 °C, the manufacturer wins. We do not use Amazon customer ratings or other sites' rankings.

Who it's for: searing, browning and deglazing every day, on any hob including induction.
What nobody tells you: at 1.6 kg according to Beka, it is the heaviest pan in this selection. Its triple encapsulated base heats the bottom well but not the sides, which are single-layer steel: a sauce that climbs the walls cooks more slowly there than in a fully clad pan.
What I liked: it is the best balance in the selection. Uncoated 18/10 steel, a three-layer base with a 22 cm disc according to Beka, a riveted cast stainless steel handle, oven-safe to 200 °C and dishwasher-safe, and a 25-year guarantee. The Belgian brand pitches it for red meat: the bare surface encourages the Maillard reaction, the brown crust that carries the flavour, and the browned bits left behind deglaze into a sauce. It is the simplest answer to "which stainless steel pan brand?" for a first serious purchase.
Who it's for: going from hob to oven for under 50 euros.
What nobody tells you: WMF calls it dishwasher-safe but recommends washing it by hand. The weight and country of manufacture cannot be verified for this reference: we mark them n.c.
What I liked: WMF describes its Cromargan steel as 18/10 or equivalent under the European standard, a TransTherm base for even heat distribution and retention, and oven use up to 250 °C, more than our top pick. The hollow handle limits the heat that reaches your hand, and the wide pouring rim helps pour a sauce without drips. The inside is brushed, the outside mirror-polished.
Who it's for: a first stainless steel pan on a budget.
What nobody tells you: its handle is Bakelite and Beka states it is not oven-safe. You cannot finish a rib steak or a frittata in the oven in this pan.
What I liked: it is the cheapest and the lightest pan in the selection, 0.98 kg according to Beka, with the same 18/10 steel and a triple encapsulated base like the Chef. The handle is heat-resistant, the pan goes in the dishwasher and on every hob including induction, and Beka guarantees it for 10 years. To learn to cook without a coating, it is the most sensible way in.
Who it's for: cooks who deglaze and reduce a sauce in the pan.
What nobody tells you: Fissler publishes neither the weight nor the exact steel grade ("recycled stainless steel"), and it costs more than our top pick with no stated guarantee.
What I liked: it is the only pan in the selection with a measuring scale inside, handy for measuring wine or stock when you deglaze, and its very wide rim pours cleanly. Fissler's Superthermic base works on every hob including induction, the pan is oven-safe to 230 °C and dishwasher-safe, and it is made in Germany according to the brand.
Who it's for: made-in-France multi-layer steel, for a professional-grade pan at home.
What nobody tells you: it is the most expensive pan in the selection, and for a 28 cm diameter the usable surface is only 20 cm according to De Buyer. The maximum oven temperature is not published.
What I liked: its one-piece body in five layers of 18/10 (AISI 304) steel heats up quickly according to the brand, and the heat reaches the sides, not just the base. It is made in France, goes in the oven and the dishwasher, weighs 1.34 kg and has a riveted cast stainless steel handle. De Buyer presents it as PFAS-free: with no coating, it contains no PTFE by design.
Who it's for: finishing dishes in a hot oven, with a lifetime guarantee.
What nobody tells you: when checked, the offer came from a third-party seller with limited stock, and Cristel says "suitable for all hobs" without naming induction: we mark induction as n.c.
What I liked: it is the only pan in the selection that is oven-safe up to 300 °C according to Cristel, and even under the grill. Its five-layer 18/10 steel body, with no added base, gives a 22.1 cm base, wider than the De Buyer's, for 1.33 kg. Made near Montbéliard, it carries the Origine France Garantie label and a lifetime guarantee against manufacturing defects.

Choose the base construction first, then the alloy, the handle and the size: these are the criteria that separate the 6 pans in this comparison the most.
An encapsulated base, also called a triple base or sandwich base, seals an aluminium disc under the pan; a fully clad pan layers steel and aluminium over the whole body, walls included. Stainless steel on its own conducts heat poorly: the aluminium does the spreading. An encapsulated base is enough for searing and sautéing. A clad body also heats the sides, useful for a sauce, a sauté pan or a wok.

18/10 means 18% chromium and 10% nickel in the steel. Chromium makes the steel stainless; nickel makes it shinier and more resistant to corrosion. Every pan we kept states 18/10 steel, except the Fissler, sold as "recycled stainless steel" with no grade given. So the best 18/10 stainless steel pan is not the one that prints it biggest on the box: with the same alloy, the base makes the difference.
A riveted stainless steel or cast stainless steel handle goes in the oven: 200 °C for the Beka Chef, 230 °C for the Fissler, 250 °C for the WMF, 300 °C for the Cristel. A Bakelite handle, as on the Beka Polo, stays cooler on the hob but cannot go in the oven. A removable handle, as on Tefal's Ingenio or Cristel's Casteline ranges, saves cupboard space and lets you stack your cookware, provided you check that the handle is included.
A 28 cm pan serves 4 to 6 people according to Tefal's size guide, a 24 cm 3 or 4. Check the usable surface: the 28 cm Affinity offers only 20 cm of flat base according to De Buyer, the Castel'Pro 22.1 cm. Weight ranges from 0.98 kg (Beka Polo) to 1.6 kg (Beka Chef): for tossing vegetables with a flick of the wrist, the lightest is the most comfortable.
Pick stainless steel for searing, browning, deglazing and durability; pick non-stick aluminium for eggs, delicate fish and crepes. Aluminium heats faster and weighs less, but a coating wears out. An uncoated stainless steel pan does not mind metal utensils or the dishwasher.
Five well-known pans were set aside, for reasons that could be checked on the day:
No single brand beats the others; ranges do. Beka and WMF cover everyday cooking at a reasonable price; De Buyer and Cristel make five-layer pans in France; Fissler makes its pans in Germany. Look at the base construction and the guarantee rather than the name.
Both contain 18% chromium; 18/10 contains 10% nickel, 18/8 contains 8%. A little more nickel makes the steel slightly shinier and more corrosion-resistant. In the kitchen, the thickness and construction of the base matter more than this two-point gap.
Preheat the empty pan over medium heat. The water drop test, recommended by Tefal and Beka, tells you when it is ready: the drop forms a bead that rolls around, which is the Leidenfrost effect. Then add the fat, then well-dried food, and wait until it browns: it stops sticking and releases on its own. Seasoning is not essential on stainless steel: it mainly applies to carbon steel.
For everyday cleaning, deglaze or soak in hot soapy water, then scrub with a sponge. For a burnt base, use a paste of baking soda and water; for white marks or discolouration, a little white vinegar warmed and then rinsed, as Beka advises. Dry straight away to avoid marks.
Yes, if its base is magnetic: 5 of the 6 pans we kept are stated as induction-compatible by their manufacturer, the Cristel Castel'Pro being described as "suitable for all hobs" without more detail. The simplest test is a magnet, which should stick to the base.
